Beetroot & Berries Salad

This salad brings together earthy roasted beetroot, juicy berries, creamy feta and crunchy seeds for a fresh combo that tastes as good as it looks. It’s simple, seasonal, and full of colour — the perfect side or light lunch for warm days (or any day you want to eat something that feels a little fancy but is super easy to make).

🌿 What you’ll need:

  • Roasted beetroot (sliced or cut into wedges)
  • Fresh berries (we love a mix of strawberries and blueberries)
  • Rocket or mixed leafy greens
  • Crumbled feta cheese
  • Toasted pumpkin seeds or sunflower seeds
  • Olive oil & balsamic vinegar (or our Barn-made vinaigrette)
  • Salt & black pepper to taste

🍽️ To make:

Toss the greens with olive oil, a splash of balsamic, salt and pepper. Add your beetroot, berries, and feta, then sprinkle with toasted seeds. Serve immediately and enjoy the freshness.
